This easy protein ice cream is naturally sweet from mango and gets its creamy texture and protein from Alpro's plain, unsweetened vegan Skyr alternative.

1. Add the Alpro Skyr alternative to a high-speed blender or food processor, followed by the frozen mango cubes.

2. For an extra protein boost, add one scoop of unflavoured soy or pea protein isolate. Mango-flavoured protein powder also works well. Add a few drops of mango, passion fruit, or lemon flavoring if you would like a stronger fruit flavor. Check the labels to make sure your protein powder and flavor drops are vegan.

3. Pulse until the mango begins to break down. Stop and scrape down the sides as needed, then blend just until the mixture is thick, smooth, and creamy. If protein powder makes it too thick to blend, add a small splash of water. Avoid over-blending, as the mixture will warm up and become softer.

4. Serve immediately for a soft-serve texture. For firmer scoops, transfer the mixture to a freezer-safe container and freeze for 20-30 minutes.

Nutrition is estimated for two 350g servings made with 400g Alpro Skyr Alternative Unsweetened and 300g frozen mango. Optional protein powder and flavor drops are not included and may change the nutrition values.
